Potential Carcinogen Debated By Food Scientists

GENEVA - Officials from the World Health Organization (WHO) and the United Nations Food and Agriculture Organization gathered in an emergency meeting after new data showed a known carcinogen is present in some carbohydrates.

Acrylamide, shown to cause cancer in lab rats, was found in specific carbohydrates that were fried or baked at high temperatures. Those present at the meeting did not validate or refute the findings, but said that further research was necessary.

They also urged people to eat balanced diets with fruits and vegetables.
